Soggy broccoli. I had served this to my family one too many times! Frozen broccoli…microwavable container…heat to mush level…serve…repeat. It was my desire to increase the amount of vegetables that our family was eating, but something had to change. So, I found a 2 1/2-hour class called “Vegetables Done Right!” I signed up for it, attended the class, and completely changed the way we eat vegetables in our household! If I had to choose just one take-away from the class, it would be…roasting vegetables. (I think I hear some laughter.) But, for reals, this was a new concept for me. I had never learned it before.
Here’s one of our new favorites: Cinnamon Roasted Sweet Potatoes (Well, Really Yams).
*Preheat oven to 450Ā° F.
*Wash, peel, & slice sweet potatoes into your favorite French fry size.
*Put sliced sweet potatoes (yams) in a bowl & pour some grapeseed oil over the top.
*Sprinkle a bunch of cinnamon on top.
*Mix together really well, so the cinnamon is fully dispersed.
*Spread into single layer on 1 or 2 (depending on how much there is) parchment paper-covered sheet pan(s).
*Sprinkle with salt.
*Roast for 25 minutes (or more, or less, depending on desired doneness).
*Eat & enjoy!
My husband, who used to avoid sweet potatoes (or yams, as it were), now gladly eats them, when prepared using this recipe! Our daughters enjoy them too. Success!
